Feta & Spinach Stuffed Grilled Cheese (Print version)

Thick slices of bread stuffed with garlicky spinach and tangy feta cheese, grilled until golden and perfectly melted.

# What You'll Need:

→ Vegetables

01 - 2 cups fresh spinach, chopped
02 - 1 garlic clove, minced

→ Dairy

03 - 1/2 cup crumbled feta cheese
04 - 1/2 cup shredded mozzarella cheese
05 - 2 tablespoons unsalted butter, softened

→ Bread

06 - 4 thick slices country-style or sourdough bread

→ Seasonings

07 - 1 tablespoon olive oil
08 - 1/4 teaspoon black pepper
09 - Pinch of salt

# How to Make:

01 - Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add chopped spinach and cook, stirring, until wilted approximately 2 minutes. Season lightly with salt and pepper. Remove from heat and let cool slightly.
02 - In a mixing bowl, combine sautéed spinach with crumbled feta and shredded mozzarella. Mix until well incorporated.
03 - Lay out four bread slices. Evenly distribute spinach-feta mixture over two slices, then top each with a remaining bread slice to form two sandwiches.
04 - Spread softened butter evenly over the outside surface of each sandwich.
05 - Heat a clean skillet or griddle over medium-low heat. Place sandwiches in skillet and cook 3 to 4 minutes per side, pressing lightly, until bread achieves golden brown color and cheese is fully melted.
06 - Remove sandwiches from heat and let rest 1 minute. Slice diagonally and serve immediately while warm.

# Expert Tips:

01 -
  • It feels indulgent but uses simple ingredients you probably already have.
  • The feta adds a salty tang that makes this way more interesting than regular grilled cheese.
  • It comes together in twenty minutes, perfect for lunch or a quick dinner.
02 -
  • Dont rush the heat, medium-low is your friend or the bread burns before the cheese melts.
  • Let the spinach cool a bit before mixing or it makes the cheese clumpy and weird.
03 -
  • Press the sandwiches lightly with your spatula while cooking to help everything meld together without squishing out the filling.
  • If your skillet is big enough, cook both at once to keep them equally hot and crispy.
